Ingredients
  1. 3 large avocados
  2. juice of 2 limes
  3. 1/2 tsp salt
  4. 2 corn cobs
  5. 4 oz crumbled goat cheese
  6. large handful of fresh cilantro
  7. tortilla chips
Instructions
  1. Boil or grill the 2 corn cobs, then cut the kernels off the corn.
  2. In a large bowl, smash the avocados with lime juice and salt. Add the corn, goat cheese and cilantro and mix everything well together. Feel free to add a bit more salt if needed, especially since the corn and goat cheese are quite sweet. Serve right away with tortilla chips.
