Marinade
  1. 1/2 inch thick slice of fresh pineapple
  2. juice of 1/2 lime
  3. generous pinch of red pepper flakes
  4. 1 clove garlic
  5. 2 tbsp olive oil
  6. 2 tsp worcestershire sauce
  7. salt
  8. pepper
  9. 1 lb flank steak
Fajitas
  1. diced pineapple
  2. 6-8 tortillas
  3. fresh cilantro
  4. 2 sweet peppers
  5. 2 serrano peppers
  6. half red onion
  7. sour cream
Marinade
  1. Put the flank steak in a large ziplock bag. Add the rest of the ingredients to a blender and process until thoroughly smooth. Add the marinade to the flank steak, covering it well. Keep the marinated steak in the bag at room temperature for 20-30 minutes (no more than that, or it turns mushy!). Preheat your grill or pan to high and cook the flank steak ~5-minutes minutes on each side. Let it rest for 10 minutes before slicing.
Fajitas
  1. In the mean time, slice the sweet peppers, serrano peppers and half a red onion. Cook them on high heat for about 3-4 minutes. To assemble the fajitas, add the following on top of a tortilla: the sliced flank steak, the cooked peppers/onion combo, diced pineapple, sour cream and fresh cilantro
