Citrus Roasted Olives

 

Olives and cheese are probably my favorite appetizer, making an appearance at least a couple of times a week. Pair them with a glass of wine, and I can’t think of a better way to start preparing dinner. I usually just scoop the olives straight out of the jar (I love the ones stuffed with pimentos!), but this time I wanted to do something a bit special. Some seasonings and citrus juice take them up a notch, and it’s such a quick, but festive appetizer in case you have unexpected guests. Serve with an array of hard cheeses, some pita crackers and enjoy!

Ingredients
  1. 2 1/2 cups mixed green and black olives (3/4 pound)
  2. 2 1/2 tbsp extra-virgin olive oil
  3. 2 garlic cloves
  4. 1 tsp dried oregano
  5. 1/4 tsp crushed red pepper
  6. 1/2 tsp kosher salt
  7. 1/2 tsp freshly ground black pepper
  8. 1 tsp finely grated orange zest
  9. juice of half an orange
  10. 1/4 cup flat-leaf parsley
Instructions
  1. Preheat the oven to 450 degrees.
  2. Mince the garlic. In a small baking sheet, toss the olives with olive oil, garlic, oregano, crushed red pepper flakes, salt and pepper and roast until sizzling, about 12-15 minutes. In the mean time, finely grate 1 tsp of orange zest and chop some fresh flat-leaf parsley. As soon as the olives come out of the oven, toss them with the orange zest, juice from half an orange and chopped fresh parsley. Serve warm.
