Prosciutto and Peach Salad

The peaches have been going bonkers at the farmer’s marke this week, and, while I’ve been snacking on them all day, I still haven’t had enough. So they made it into my dinner. This easy salad is perfect for hot summer days, whether for lunch or dinner. It’s light, but filling and full of flavor. The grilled peaches are the secret, and they take the whole thing out of this world.

Ingredients
  1. 4 peaches
  2. 1 tablespoon olive oil
  3. 1 large ball of fresh mozzarella
  4. 8 thin slices of prosciutto
  5. big handful arugula
  6. drizzle of olive oil
  7. salt and pepper
Instructions
  1. Cut the peaches in half and scoop out the pits. Grill the peaches for a couple of minutes, until they warm up and get some grill marks on them. Slice up the mozzarella into thin slices.
  2. On each plate, place a handful of arugula. Top with sliced mozzarella, grilled peaches and prosciutto. Generously salt and pepper, then drizzle some olive oil on top.
