Feta and Red Pepper Dip

 
 
I haven’t been around much, that I know. It’s not because I stopped cooking or thinking about cooking, if anything it’s the opposite. I’ve been day dreaming about our farmer’s market, fresh veggies and summer salads, but none of those materialized because, you see, I live in Chicago, and it’s April 2013, and my god the weather sucks and I want real food.  So I had chili at a bar.  Then I had chili at a different bar. Then I baked some ehhh muffins that couldn’t have been more bland if I tried. And so cooking has failed me this month, and it’s been too uninspiring around my kitchen to dare to post anything on a food blog and wax poetical about “delicious”, “yummy” and “decadent”.
 
But my weather app is telling me that things are starting to look up this week, and I heard some birds chirping this morning. Could it be? Is spring here? Am I going to eat realasparagus soon!? So I will wait patiently for the farmer’s market to open up; I will give up crappy burgers; I will eat healthy Mediterranean food; I will make it to spring.
 
So in the spirit of this mantra, here’s an easy, fool-proof, healthy dish. It won’t fail because it can’t: it’s 4 ingredients long and there’s no cooking involved. It’s quick, quick enough to make on a tired, dreary winter-when-it-should-be-spring evening. It has that nebulous Mediterranean connotation to it, so it must be healthy. This is just the right kind of pick-me-up when we need things to be better than they really are.

Ingredients
  1. 6 oz feta cheese
  2. 2 roasted red peppers
  3. 1/2 tsp chili powder
  4. 2 cloves of garlic
  5. pita bread for serving
Instructions
  1. Roast the red peppers and peel them. In a food processor, place the feta, red peppers, chili powder and garlic. Pulse until everything comes together in a dip. Super easy!
  2. Serve with pita bread or carrots for dipping.
