Mushroom Sauce with Whole Wheat Pasta

 

On weeknights I’m always looking for a healthy and easy dinner and somehow that often involves mushrooms. Mushrooms are such a great alternative for meat as they are tasty, healthy, filling and quick to cook. This recipe takes about 20 minutes, is super flavorful and easy to scale up so you can have leftovers for tomorrow’s lunch. I served the mushrooms with pasta because I wanted a vegetarian meal, but they would also go really well as a side dish with steak or pork chops. Versatile and quick: just how I like my Tuesday dinners!

Ingredients
  1. 20 oz mushrooms, small cremini are best
  2. 1 tbsp capers
  3. 4-5 garlic cloves, minced
  4. 2 tbsp olive oil
  5. 1/2 tsp salt
  6. black pepper
  7. 4-5 sprigs of thyme
  8. half a lemon
  9. 3 tablespoons of butter
  10. fresh parsley for garnish
Instructions
  1. Preheat the oven to 450F. In a large bowl, add the mushrooms, capers, minced garlic, olive oil, thyme, salt and pepper. Mix together well and place in a shallow baking dish. Top them with butter. Bake at 450F for about 15 minutes, until they are golden and cooked through. Remove from oven and add juice from half a lemon.
  2. While the mushrooms are baking, boil 1/2lb spaghetti according to package directions.
  3. Toss the mushrooms with the hot spaghetti, making sure to get the pasta coated with all the juices from mushrooms. Garnish with fresh parsley.
