Granola

 
One of my favorite things to eat for breakfast is yogurt, mostly because it’s simple and doesn’t require any prep work. But yogurt can be boring on its own, and while fruit add lots of flavor, I like to add some granola for texture. We’ve been making this granola for a few years now, and we almost always have some in the cupboard. It’s very basic and I like it the way it’s written here, but you can always customize it with chocolate chips or dried fruit.
 
This post is also awesome because the picture above was taken over 2 years ago, when I first learned there was such a thing as “food photography”. I was super proud when I took this picture, but now I’m totally noticing the poor focus, the bad bokeh and the lack of reflected light. Ah, isn’t life all about learning and getting better? The upside to this is that the granola is just as tasty as it was 2 years ago!

Ingredients
  1. 3 cups oats
  2. 4 tbsp brown sugar
  3. pinch of salt
  4. 1/3 cup honey
  5. 1/4 cup vegetable oil
  6. 1 tbsp vanilla extract
Instructions
  1. Preheat the oven to 325F. Mix the oats, sugar and salt in a bowl. In a small bowl whisk together the honey, oil and vanilla extract. Now add the wet ingredients to the oats and mix everything well using your hands. Spread thinly on a large baking sheet and bake for 20 minutes, or until golden brown.
  2. Allow to cool completely before adding optional ingredients such as sliced almonds, mini chocolate chips or raisins. Store in air tight container.
