Warm Goat Cheese Salad

This one’s for you, Sharon! Sharon is my lovely coworker who shares a cheesy fries obsession with me, so naturally, she makes a great lunch buddy. Every now and then we go on a health kick, and we occasionally have this salad at a nearby restaurant. Ok, we have mashed potato springrolls on the side too, but we’re talking about this salad today. It’s really flavorful and interesting, mixing sweet and sour, creamy and crunchy. The original salad has apples and walnuts instead of strawberries and almonds, but I had a heaping pile of sweet, in-season strawberries taking up half my countertop, and they really needed to be eaten. This is a perfect summer salad, and I fully recommend it.

Ingredients
  1. 2 oz goat cheese
  2. 1 egg
  3. 2 tbsp bread crumbs
  4. 3 tbsp olive oil
  5. 1 lemon
  6. 1 tbsp honey
  7. 4 strawberries
  8. almonds
  9. chives
  10. mixed greens
Instructions
  1. Grate the lemon zest from the lemon and set aside.
  2. Dressing: In a small bowl, combine the olive oil and honey. Add the juice of a lemon. Whisk well and set aside.
  3. Goat cheese: Heat a skillet on medium heat. In a small bowl, whisk the egg. Put 2 tbsp of bread crumbs on a plate. Using a spoon, or your hands, form the 2 ounces of goat cheese in 2 small patties. I cheated a bit this time, and bought 1 oz goat cheese medallions from Trader Joe's. Dip each goat cheese medallion in the egg mixture, then cover it well in bread crumbs. Fry the goat cheese in the skillet for a couple of minutes on each side, until golden brown. Set aside.
  4. Salad: On 2 plates, arrange a couple of handfuls of mixed greens. Slice 4 strawberries and some chives; adjust the amount of ingredients to your liking. Top the mixed greens with sliced strawberries, chives, almonds and lemon zest. Drizzle some dressing on the salad, and top with one of the goat cheese medallions.
