Bacon wrapped scallops with asparagus

 
I really really like this recipe. It’s really easy and quick to make on a week night, as it doesn’t require any advance preparation: just wrap the scallops in bacon and cook everything for about 12 minutes. The flavors are mild, elegant, and work together seamlessly. It’s also surprisingly hearty: each person gets 4 slices of bacon and about a half a pound of fish. That’s a lot of food, but somehow, there’s still room for some after-dinner frozen yogurt.

Ingredients
  1. 8 jumbo scallops
  2. 8 slices of bacon
  3. 1 bunch asparagus
  4. 1 lemon
  5. lemon pepper
  6. salt
  7. fresh thyme
  8. olive oil
  9. dash of cayenne pepper
Instructions
  1. Start the broiler and let everything heat up while we assemble the ingredients.
  2. Using only 1 large baking sheet, spread the asparagus in a single layer. Drizzle with a bit of olive oil and generously add salt and pepper.
  3. Wrap each scallop in one bacon strip and affix with a toothpick. Place on baking sheet next to asparagus. Salt liberally, very liberally, and add lemon pepper. Add a few leaves of fresh thyme and a dash of cayenne pepper on each scallop. Drizzle with olive oil. Flip scallops and repeat.
  4. In the broiler, cook the scallops about 6 minutes per side.
  5. Drizzle liberally with lemon juice.
