Hearty Salad

 
 
This salad doesn’t really have a name. I could list all the ingredients, or call it More Than Salad like Kay, but let’s just stick with Hearty Salad, since it makes such a great lunch all on its own. It’s not a quick salad, as you have to make the croutons and the dressing, but if you’ge got some time on the weekend and would like a light, easy lunch, this is not a bad choice at all. Kay added bacon, but I left it out, since I wanted a vegetarian meal.
 
I listed specific ingredients for the salad that work very well, but to be honest, you can totally wing this based on what you have at home. No tarragon? That’s ok, use any fresh italian herb you have around. No sriracha? Anything spicy works. Do your best to approximate the ingredients below, but substitute with whatever you have; no need for another grocery store trip.

Croutons
  1. 4 slices of good wheat bread
  2. 2 cloves of garlic
  3. a sprig of fresh tarragon
  4. 1 tbsp sundried tomatoes in oil, julienne cut (they come like this in jars)
  5. sriracha sauce
  6. 1 tbsp olive oil
  7. 1/4 tsp salt
Dressing
  1. 4 tbsp mayonnaise
  2. 2 tbsp sour cream
  3. black pepper
  4. 1 tbsp rice vinegar
  5. 10 sprigs of chives
  6. 2 tbsp grated parmesan
Salad
  1. 2 handfuls of baby spinach
  2. 1/2 red onion
  3. 1 avocado
  4. 12 cherry tomatoes
  5. your favorite cheese (I used sharp cheddar this time, but had parmesan and mozzarella in the past with great success)
Instructions
  1. Let's start with the croutons, since they take the longest. Pre-heat the oven to 400 degrees. Dice the bread into crouton-sized pieces and place in large bowl. In a food processor, throw in the rest of the ingredients for the croutons and pulse until you have a paste. Mix with the bread pieces and place on a baking sheet. Bake for 10 minutes, until golden brown. I kinda burned mine, so keep an eye on it.
  2. In the mean time, let's make the dressing. This one is easy: all the ingredients under "Dressing" go into the bowl of the food processor; don't even worry about cleaning it after making the crouton paste. Pulse the ingredients together until they are evenly mixed.
  3. Check on the croutons, as it may be time to take them out of the oven.
  4. Let's assemble the salad. Just dice up the red onion and the avocado and add to the salad bowls. Add the rest of the ingredients under "Salad". At the end, add the dressing and croutons. Enjoy!
